The capacitor stores energy but not charge because charges on the plates of the capacitor are equal and opposite so no resultant charge in the capacitor. Therefore, energy is stored due to the charge separation.

The capacitance of the capacitor is the ratio of the charge stored on one plate of the capacitor to the potential difference between the plates.
